Usually from Wisconsin, this medium soft cheese is made in brick-shaped form. Developed originally in 1877 in Wisconsin, this cheese is derived from American Cheddar, but is a soft texture. This cheese has a sweet and mild flavor  and becomes a ripe cheese with age.
